Chewy Anzac Biscuits

Ingredients:

Dry   

2 cups almond meal

1 cup coconut (desiccated/ shredded)

1 cup oats

1/2 cup coconut sugar

1 tsp baking powder

pinch of salt

Wet

4 tbsp coconut oil

4 tbsp cacao butter

2 tbsp maple syrup

1 tsp vanilla

6 tbsp water

Directions:

In a large mixing bowl, combine almond meal, coconut, oats, coconut sugar baking powder and salt.

In a pot gently melt together the coconut oil, cacao butter maple syrup and vanilla.

Pour wet mix into dry and stir through. Add water until mix is evenly combined.

Roll tbsp measures of mixture into balls and press onto a lined baking tray.

Bake on 180°C for 8 mins.

Biscuits will be soft so leave on tray for 5 mins before transferring to a cooling rack.
